Slow cooked Chipotle Beef Brisket

When it rains it pours, and on the farm, that means mud and more mud. The grass is happy, though waterlogged, and that makes the animals and us happy, though wet. I am more and more convinced these days that the slow cooker is the perfect winter cooking vehicle. As we are out with the animals, repairing our dam in the rain and mud, and getting soaked to the bone, our dinner is cooking away ready and hot. To me, that is one of the simple pleasures: Being out in the elements, knowing that there is a stew or something waiting that by the end of the day will be satisfying and full of flavor.
